Restaurant
Our cuisine draws on global inspirations and refined techniques, yet remains deeply rooted in the Istrian terroir. The result is gastronomy that is contemporary, yet authentic and sincere. Here, the enjoyment of food takes on a new meaning — elevated, soulful, and layered.
The Team
At the heart of Stara Škola is our team, led by Head Chef Jan Vukasović. Together with Ana, Jan brings creativity and precision to every dish. Their philosophy is simple — to celebrate seasonal ingredients and local producers. Our menus are designed to be shared, because it’s in togetherness that we discover the best of Istrian flavor and spirit.
Wine
A part of our story is our sister winery, Clai, located just a few kilometers away. Their natural wines, known for their distinctive character, pair perfectly with our cuisine; a reflection of the land and traditions we share.
Location
Set in a restored village schoolhouse, Stara Škola blends architectural heritage with bold interiors and panoramic views of the countryside and Bay of Trieste. It’s a place where modern Istrian identity is expressed through design, cuisine, and atmosphere.
Bar
We see the bar as a place of encounter where conversations with the bartender flow easily over a glass of fine wine or a unique cocktail you can taste only here, and where the eno-gastronomic experience unfolds in a more relaxed setting. Join us on that journey.

The Staffroom (Zbornica)
